Monday Meal Plan
by lauralynne

Welcome 2009! I am glad you are here. There is something so refreshing about a new year. My birthday is coming up this Wednesday and I like that we celebrate a new year of the common era at roughly the same time that I am reflecting on another year of ME. :)
Michael and I had a lovely time at the wedding yesterday. The reception was held at The Melting Pot–a fondue restaurant–and neither of us had eaten there before, so that was a neat experience. So much food, though! I am a little queasy today from all that I ate and so much of it was not what we normally eat–namely, meat. It was very good, but my stomach is not accustomed to beef and chicken and isn’t sure whether it should protest or not. Dessert was chocolate fondue and that was delicious. If it weren’t so far away, I would totally request that we do just that for Valentine’s Day. Maybe I will rig some kind of homemade fondue instead…
This week contains a lot of pantry and freezer meals as we continue to eat down what is in our fridge and freezer in anticipation of moving. The weekend is still up in the air, so I am planning only through Friday this week.
Monday: Pasta with Quick Marinara, Steamed Broccoli
To Do: Soak beans
Tuesday: Vegetable Bean Soup, Cornmeal Biscuits
To Do: Bake Angel Food Cake (Michael)
Wednesday: (my birthday–30!) Mushroom Stroganoff, Braised Cabbage, Angel Food Cake with Peanut Butter Icing
Thursday: Leftovers
To Do: Bake Whole Wheat Bread
Friday: Ricotta Omelet, Parmesan Zucchini, Whole Wheat Toast

Happy Birthday!
Thanks so much for the fondue idea! This past weekend, I bought a bag of cheese ends at the farmer’s market. They were only $2/lb. compared to $6-7/lb of regular cheeses. I was thinking I would grate it for cheese soup, but now I am doing fondue!
I have a fondue pot and those long forks, gotten at a yard sale last year sometime. My mom used to make fondue to dip bread, when I was a kid, but I will also provide veggies and whatever leftover meat we have. It will be a fun way to clear the fridge of odds and ends. Whoo Hoo!
I have two fondue sets and never use either!
